ANZAC BISCUIT!

information from Wikipedia: ANZAC Biscuits are a sweet biscuit popular in Australia and New Zealand, made using rolled oats, flour, coconut, sugar, butter, golden syrup, bicarbonate of soda and boiling water. Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. The biscuits were often sent to loved ones abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.

the idea of baking anzac biscuit came about, when we (ben, milia, ah meng, ah yau and i) went for kopi botol. kopi botol is the speciality in one of the coffee shop in town, kopi muzium. you will never find kopi botol in their menu. you need to be their loyal customer to know that they serve kopi botol. well, basically, it's just sweet-black kampung coffee. nothing special..but we like. =)
ok, back to my anzac biscuit. while having kopi botol, we feel like eating something. as we did not want anything heavy, we ordered anzac biscuit. and it cost RM3 per piece, which i think was very expensive for a piece of biscuit.
so i searched the recipe for the biscuit and it is actually very very easy to make, healthy (because of the raisins and oats- source of dietary fiber and antioxidants too) and taste good. dad said, i shall sell it at RM1.50 per piece. hehe.. here's the recipe:
1. pre- heat oven.
2. mix the flour, oats, coconut, brown sugar and raisins in a big bowl.
3. melt the butter in a saucepan. add in golden sugar followed by water and baking soda.
4. pour the wet mixture into the dry ingredients.
5. mix them thoroughly.
6. place a walnut size of dough onto the baking tray (lined with grease paper) and flatten them with you thumb or spoon.
7. bake at 150 C for 15 mins or until they turn brown.
8. biscuit will harden when cool.
